Do you like fresh herbs?

Me too.

Do you like Argentina?

Me too.

So I’m quite sure you will like chimichurri.

Here is the list of ingredients that you need to make this sauce that tastes like a garden and vacation. Once you try it, you will be making it all summer. 

  • 1 bunch of parsley
  • 1 bunch of coriander
  • 20 leaves of oregano (more or less)
  • 2 cloves of garlic
  • 1 teaspoon (or 2) of cumin
  • 4 tablespoons white vinegar
  • ½ sweet onion ( red onion)
  • 1 cup olive oil – or until desired consistency
  • salt and pepper to taste
  • hot pepper flakes (optional)

You put all of this goodness in a food processor and after a few seconds, you will get this:

Argentinians eat this wonderful green sauce with grilled meats but at home we eat with everything : pasta, bread, steamed veggies and (the best) with rice.

P.S.: Chimichurri creates an addiction. My neighbours have started a peculiar kind of swap with my husband: “I will babysit your children this morning if you make me a bowl of chimichurri.”

Enough said.
